Sillvia is produced using cold fermentation, which slows the decomposition of sugars in the coffee cherries and produces a bright citrus and floral profile. The temperature of the fermenting coffee is controlled by submerging sealed containers of coffee cherries in the pure cold waters of the rivers throughout the Ninety Plus estates.
